Reasons Coffee is Good for You + Pizza Recipe

I subscribe to Quickie Chick's Blog - funny name, but awesome tips and recipes.  Thanks, Erin for introducing me! Yesterday's post was about "5 Reasons Coffee is Good for You" and I thought I'd share...since I love my cup o'joe.

1.  Improves your focus and concentration at work.
2.  Fights heart disease.
3.  Ups your athletic ability so you burn fat faster
4.  Reduces post-exercise muscle pain
5.  It's only 2 calories per cup (before my Cinnabon creamer of course)

On to the 'Eat Clean" Pizza Recipe


Ingredients:
*1 whole wheat pizza crust
*1 can crushed tomatoes
*1/4 cup organic marina sauce (or make your own)
*1 bag spinach, cooked
*1/4 lb cooked chicken or turkey sausage
*any other veggies you'd like to add
*1 cup low fat mozzarella cheese (I used low fat mozzarella & cheddar on my last one)
*fresh oregano, basil & parsley if you wish

***NOTE - I tend to just throw things together so if measurements aren't exact, it won't hurt.  I just 'eye' it.***

Directions:
1. Preheat over to 425 degrees.
2. Cook down spinach in 1 tbsp of olive oil and pepper to taste.
3. Brown sausage in a pan (optional).  I like mine crispy.
4. Once spinach is cooked down, set aside to cool.
5. Spread marinara and crushed tomatoes over crust
6. Top with spinach & other veggies
7. Sprinkle cheese over top & arrange sausage
8. Top with any remaining herbs and bake for 10-15 mins.  Let cool for 5 mins before cutting.
9. Enjoy!

It's SO easy.  And like I said, feel free to add/take away anything.  I've been growing oregano and basil so I topped mine with that and it was delish.
